We joke around a little about how it's my love language.
Every once in a while I'll invite all my friends over for a big Sunday dinner.
One of my favorite things to make is this Chicken Enchilada Soup that you eat with Cheese Crisps. It's soo easy and especially delicious! Don't believe me? Ask my friends. Or better yet, try it yourself!
Chicken Enchilada Soup:
1 can Chicken Broth
1 8oz block of Cream Cheese
2 large cans of GREEN mild chili enchilada sauce
3 C Half & Half
1 1/2 C Minute Rice
1 can drained corn
1 can dices green chiles
1. In a sauce pan on low, melt cream cheese and chicken broth.
2. Cook and shred chicken and place aside.
3. Combine other ingredients in soup kettle.
4. Once rice is soft, add chicken & stir.
5. Serve with Cheese Crisps
